Pommes Sarladaises
Ingredients, per person:
- 250g potatoes (preferably Yukon Gold) cut in even mouthful sizes
- 1 Tbs duck fat
- 1 clove garlic, minced
- 1 Tbs flat-leaf parsley, minced
- salt, pepper
Process:
- Preheat oven to 220ÂșC
- In an oven proof skillet over medium heat, toss the potatoes in the duck fat until they are golden
- Season
- Roast in the oven for about 10 minutes, until they are tender
- Finish the potatoes on the stovetop, frying them until crispy
- toss in garlic and parsley, adjust seasoning
